currently on my white couch, next to Sasha, under my black and grey leopard blanket, while watching Criminal Minds and after having finished my RAINN Training for the day. I also read chapter 13 of my organic chemistry textbook. took my final yesterday, made history! scored higher on it than my midterm exams, which, according to dr. katsamanis, has never happened before. score! cooked a penne pasta with chicken, spinach and a red pepper for ryan to come home to eat. it was delicious!
Recipe for Spinach Chicken Pasta
Chicken tenders/breasts, cut into bite size pieces
1 package pasta of choice (I went with penne)
Olive oil
1 package frozen spinach
1 red bell pepper, chopped up
Chicken broth
Water
Minced garlic
Feta cheese
Optional: half and half or 1 8 0z. package of cream cheese
Cook pasta to al dente in boiling water with a dash of oil and salt.

In a skillet, poach chicken. First, toast the garlic in olive oil. Drop in the chicken. Add 3-4 Tbs. chicken broth with enough water so that all of the chicken is ~1/2-2/3 submerged.

Put the red bell pepper and the package of frozen spinach in the skillet. Move around contents of the skillet as necessary so everything is evenly cooked.

Remove and drain the pasta from the boiling water, transfer it to the skillet.

If you would like a more creamy feel, add either half and half or cream cheese to the skillet. If not, add another dash of olive oil and mix around contents. Let sit a few minutes so that the pasta can absorb the flavors.
When serving, garnish the pasta with feta cheese. I used parmesan cheese today, but according to Mother Jana, feta would have been ideal.
