Eggs, flour, pure vanilla extract, sugar, baking powder, apricot preserves, apples, brown sugar, cinnamon, nutmeg, orange juice, optional dried fruit: apricots, raisins, craisins, etc.
1. Strain the flour and sugar into a large bowl. Into the same bowl add baking powder. Mix all ingredients with a large spoon.

2. Into a separate bowl crack 8 eggs, pour the oil, and add the pure vanilla. Whisk the ingredients until they form an even liquidy consistency.
3. Pour the liquid ingredients into the large bowl of dry ingredients. Using your hands, knead the mixture until it becomes an even, consistent form. Once this is done, roll the oily dough into a ball and place it into a smaller, clean bowl. Cover this bowl with wax paper and refrigerate until cool.



4. Preheat the oven to 350 degrees.
5. Remove the two dough balls from the refrigerator. One will comprise the bottom of the pie and the other will comprise the top. You will need a large flat clean surface that is sprinkled with flour. Using a rolling pin, flatten out one of the balls until it is even throughout.
6. Next, place the flattened dough into the pie plate. Press as necessary so that there is no space between the plate and the dough.

7. Apply a layer of apricot preserves on the dough at the bottom of the pie pan.

8. To prepare the “inside”: in a large, separate bowl, place a heap of chopped apples and some orange juice. If you like, you may add any sort of dried fruit: apricots, raisins, craisins, etc. Cover the bowl with plastic wrap and microwave for ~10 minutes, until soft.
9. Add brown sugar and dashes of cinnamon and nutmeg.

10. Using a strainer, transfer the apple mixture from the bowl to the pie pan. Try to make sure that liquid drainage is left behind in the large bowl.

11. Next, repeat step 5 with the remaining dough ball. Place it atop the pie insides and pinch the ends so the top is meshed with the bottom. In the middle you can add decorative strips of dough and make them into a formation, but that is not necessary. What is necessary is that you add slits to the middle of the pie with a knife so that the pie can ‘breathe’.

12. “Paint” the pie with egg whites (whisk them in a separate bowl first). Then sprinkle pure cane sugar on top of the gooey layer. Now, the apple pie is ready to go in the oven.

13. Leave the apple pie in the oven for 20-40 minutes (as necessary).
