Set up your workstation. You will need a surface for flour, a bowl with egg whites, and a larger bowl with a mixture of breadcrumbs and matzo meal (about half and half).
Place a skillet on the stove top. Add oil to the pan until it is about ~1/2 inch high. Fire up the stove and let the oil heat up until it “crackles” when a dash of water is added to it.
Take a filet of chicken, place it in the flour so both sides are floured.
Dip it in the egg white bowl so that it is saturated.
Now it's time for some frying. Now that the filet is prepared, place it in the oil. Let sit to cook, and then flip as necessary. Make sure the chicken is cooked! Repeat with as many filets as you wish!
When the cutlet is cooked, transfer it to a plate with a paper towel on top so any excess oil can seep out.
