This recipe will make THREE rollie pollies!
Ingredients:
Flour, 2 tsp. baking powder, sugar, eggs, oil (either Canola [preferred] or vegetable), pure vanilla, then various (depending on type of rollie pollie)
Directions:
1. Strain the flour and sugar into a large bowl. Into the same bowl add baking powder. Mix all ingredients with a large spoon.

2. Into a separate bowl crack 8 eggs, pour the oil, and add the pure vanilla. Whisk the ingredients until they form an even liquidy consistency.
3. Pour the liquid ingredients into the large bowl of dry ingredients. Using your hands, knead the mixture until it becomes an even, consistent form. Once this is done, roll the oily dough into a ball and place it into a smaller, clean bowl. Cover this bowl with wax paper and refrigerate until cool.



4. Preheat the oven to 350 degrees.
5. Divide dough into three balls. Each one will make a different type of rollie pollie. Need a large flat clean surface that is sprinkled with flour. Using a rolling pin, flatten out the ball until it is “rollable”.
6. There are three types I like to make:
a. Chocolatey Chocolate Chunk: evenly spread Nutella on the flattened dough. Sprinkle walnuts and chocolate chips on top. Make sure that the edges have room for folding.

b. Raisins & Walnuts: Prepare the chunky ingredients by placing raisins and orange juice into a bowl. Microwave until the raisins have absorbed the orange juice and are puffy. Let the bowl sit to cool. While this is happening, evenly spread apricot preserves on the flattened dough. After, place the raisins and walnuts on top. Make sure that there is room on the edges for folding.


c. Apples & Raisins & Nuts: Prepare the chunky ingredients by chopping up apples and placing them into a bowl with some orange juice and cinnamon. Microwave until the apples have absorbed the orange juice. Also make sure to prepare raisins as you would for the Raisins and Walnuts recipe above. Spread apricot preserves on the flattened dough. Then place the apples, raisins and walnuts on top, making sure to leave room for folding at the edges.

This recipe has enough dough for 3 rollie pollies, but feel free to vary it up! Check out this one, it has blackberries and walnuts on top of a layer of blueberry preserves.

7. Roll it up until it resembles a flattened log. Place the rollie pollie on aluminum foil on a cookie sheet. Don't forget the cooking spray!

8. “Paint” the rollie pollies with egg whites (whisk them in a separate bowl first). Then sprinkle pure cane sugar on top of the gooey layer. Now, the rollie pollies are ready to go in the oven.

9. Leave the rollie pollies in the oven for 20-40 minutes (as necessary).
