Stuffed Mushrooms

I have 2 different ways of making stuffed mushrooms here!

Common to all recipes is washing the mushrooms and removing the stems. The stuffing is where we can have some fun.

This stuffing is a mixture of cream cheese and pink salmon (from a can... not that fancy!) and some salt and pepper. Try to reach a ratio like that of your everyday tuna and mayo. Sprinkle the top with parmesan cheese.

Here we have a spinach stuffing that I also like to use for a pizza topping and lasagna filling. It is composed of a package of frozen spinach, sliced olives and chopped garlic. Make sure to toast the garlic in oil in a skillet and microwave the spinach so it is usable. Mix up everything and stuff up your mushrooms. Bedazzle with some parmesan cheese.

Place a sheet of aluminum foil on a cookie sheet and spray with non-stick cooking spray. Put your mushrooms on the cookie sheet for cooking!

Oven should be set to 350 degrees. Let the mushrooms cook for a while. Sorry I have no times and measurements, that's just the way things are.

Good stuff.
