For the record, you're way better off making these yourself than purchasing them in the store. These ice cream sandwiches are WAY BETTER! (I know, I'm cocky. But at least my cockiness is justified).
Chocolate Wafers
Ingredients:
1 1/4 C all-purpose flour
1/2 C unsweetened cocoa
1 t baking soda
1/4 t baking powder
1/4 t salt
1 C sugar
1/2 C plus 2 T butter
1 large egg
Filling: ICE CREAM! WHICHEVER FLAVOR YOU WISH WILL DO!
Directions:
1. In a medium-sized bowl, mix the flour, cocoa, baking soda and powder, salt, and sugar.
2. Beat in the butter and the egg. I melt my butter in the microwave so it's easier to work with. Continue mixing until dough comes together in a mass.
3. Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately 2 inches apart. With moistened hands, slightly flatten the dough.
4. Bake for 9 minutes at 375 F. Set on a rack to cool.
**Don't fret. You will not have this many cookies with this recipe. I, for some reason, always have to make more than I need. This recipe will likely make ~1/2 of what you see here.**5. Now that your cookies are done, you can begin the fun part, putting the sandwiches together! Zapping the container of ice cream in the microwave makes it plenty easier to work with. So do that. Now, take 2 wafers (or, if you want to make super-stacked ice cream sandwiches, you can do that too!). On one (I like to have the flat side of the cookies facing the ice cream because the fluffier side is more aesthetically pleasing), apply as much ice cream as you see fit. Then, form a sandwich with the other cookie.
